Camping Recipe: Grilled Chicken Panini

Ingredients

  • 1 lbs boneless, skinless chicken breast chopped
  • 1 tbsp butter
  • ¼ onion sliced
  • ½ red pepper seeded and sliced
  • 1 granny smith apple sliced
  • 2 tbsp mayo
  • 2-4 oz cheddar cheese sliced thin
  • 4 ciabatta rolls
  • Oil
  • Salt and pepper

Instructions

  1. Wash and dry all produce.
  2. Core and slice the apple, then seed and slice the pepper. Thinly slice the onion, as well.
  3. Preheat your grill and oil the grate carefully with tongs and a rag or paper towel drenched with oil.
  4. Pat the chicken dry with a paper towel and flatted by pounding with a mallet until 1/2″ thick consistently.
  5. Season with salt and pepper.
  6. Place the chicken on the grill and cook until it reaches 160 and the grill marks look dark.
  7. Remove from the heat, wrap in foil, and return to the heat until the internal temperature reaches 165. This step helps to preserve the juices in the chicken.
  8. While the chicken cooks, season the peppers and onion with oil, salt, and pepper.
  9. Add to a cast-iron skillet and set over the fire to cook until soft.
  10. Remove the chicken from the heat, thinly slice, and toss into the pan with the peppers and onions.
  11. While the filling cooks, brush the rolls with mayo on the inside of each side of the rolls.
  12. Layer the rolls with sliced apples, and top with chicken, onions, and peppers. Add a slice of cheese to top everything off and set the bun on top.
  13. Wrap the whole thing tightly in foil and place over the fire.
  14. Cook until bread is warmed through and the cheese is melted.
  15. Serve hot!
