Camping Recipe: The Best Beef Skewers

Ingredients

  • 1/2 tsp. ground black pepper
  • 1/4 tsp. red pepper flakes
  • 2 tbsp. honey
  • 2 tbsp. Dijon mustard
  • 1 1/2 lb. sirloin or New York strip
  • 8 oz. baby portobello mushrooms
  • 1 red onion
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red bell pepper
  • Chopped fresh parsley, for garnish

Instructions:

  1. You can start this recipe before you leave home setting up your beef to marinate.
  2. Combine the ground black pepper, red pepper flakes, 1 tablespoon of honey, and 1 tablespoon of Dijon mustard.
  3. Reserve 1/4 of the marinade in a sealable container and place the remaining mix in a separate container. Add 1 tablespoon of honey and 1 tablespoon of mustard, and then whisk to combine. Seal both containers and take them with you to the campground.
  4. Carefully cut your sirloin into 1-inch cubes and add to the marinade. Add to the refrigerator for 1 to 6 hours.
  5. 30 minutes before you start grilling, remove the meat from the refrigerator and add your bamboo skewers to water to soak.
  6. Build your fire and prepare the vegetables by washing and drying. Cut the peppers and onions into 1-inch pieces and remove the stems from the mushrooms.
  7. Once your fire is hot and ready to cook, thread the meat, mushrooms, peppers, and onions onto their skewers. We recommend using only the same types of veggies and meat on a skewer to ensure even cooking.
  8. Add to the grill and cook for approximately 4 minutes per side, turning to ensure an even cook. On the last turn, brush the reserved glaze over the skewers and allow it to carmelize. 
  9. Serve over rice!
